1 1/2 cups corn kernels, cooked and drained
Juice of 3 medium limes (about 1/4 cup)
1/4 cup minced red onion
2 green onions, green parts only, minced
2 tsp. minced fresh cilantro
1/2 tsp. crushed red pepper


  1. In a large bowl, combine the corn, lime juice, onions, cilantro, and red pepper. Mix well.
  2. Transfer the salsa to an airtight container and refrigerate, stirring occasionally, for 1 hour or for up to 2 days.
  3. If desired, serve with veggies and baked tortilla chips.
