  • Serving Size: 1 1/2 cups shrimp


1 tsp. extra-virgin olive oil
1/2 tsp. minced garlic (about 1 clove)
1 lb. large peeled and deveined shrimp, fresh if possible
2 Tbsp. fresh lime juice, or more to taste
1/4 cup fresh cilantro, chopped, or more to taste
1/4 tsp. salt
1/8 tsp. black pepper


  1. Heat the oil in a large, heavy skillet over medium-high heat. Add the garlic and cook for 30 seconds, or until it is fragrant. Add the shrimp and cook, turning once, about 2 to 3 minutes per side, until the shrimp are pink and cooked through.
  2. Transfer the shrimp to a bowl, and combine with the lime juice, cilantro, salt, and pepper. Serve immediately or refrigerate for up to 2 days and serve cold.
