2 tsp. minced crystallized ginger
Grated zest and juice from 1 large lime
1 large orange, peeled and sectioned
1 large kiwi fruit, peeled and thinly sliced
1 cup fresh pineapple chunks
Mint sprigs (optional)


  1. In a small bowl, combine the ginger with the lime zest and juice; set aside for 15 minutes.
  2. Meanwhile, in a medium bowl, combine the oranges, kiwi, and pineapple chunks.
  3. Pour the ginger-lime mixture over the fruit. Toss to coat. Serve in individual cups; if desired, garnish with a mint sprig.
