2 large turnips, peeled, ends trimmed, cut into chunks
1 tsp. kosher salt
1 tsp. sugar
Water to cover
1/4 cup olive oil
1/4 cup minced fresh chives


  1. In a large saucepan, add the turnips, salt, sugar, and enough water to cover the turnips. (The salt and sugar are added to mellow the flavor of the turnips.)
  2. Cover the pan and bring to boiling. Cook for 20 minutes, until the turnips are tender. Drain well.
  3. Add the turnips to a mixing bowl and beat with electric beaters until smooth, drizzling in the olive oil while beating. Fold in the chives and serve.
