1 lb. branzini fillets with skin
1/4 tsp. sea salt
1/4 tsp. freshly ground black pepper
2 Tbsp. olive oil
1/4 cup golden raisins
2 Tbsp. large capers, drained of liquid
2 Tbsp. sherry vinegar
1/4 cup finely minced parsley


  1. Preheat the oven to broil. Place the fish fillets in a shallow roasting pan. Sprinkle the flesh side of the fish with the salt and pepper. Drizzle with the olive oil. Turn the fish over, skin side up. Broil the fish, 6 inches from the heat source, for 5 to 6 minutes.
  2. Turn the fish fillets over, flesh side up, and broil for 2 to 3 minutes. Add the raisins and capers and broil for 30 seconds more. Remove the fish from the oven, drizzle with the sherry vinegar, and garnish with the parsley.
