1 lb. boneless, skinless chicken breasts
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1/2 cup chopped onion
1 clove garlic, chopped
1/2 cup no-sugar-added apricot preserves
1 Tbsp. Dijon mustard
1 Tbsp. balsamic vinegar
1 tsp. fresh peeled, grated ginger


  1. Sprinkle the chicken breasts with the salt and black pepper. In a large skillet, heat the olive oil over medium-high heat. Sear the chicken for about 5 minutes per side. Remove the chicken from the skillet; set aside.
  2. Add the onion to the pan and sauté for 3 minutes. Add the garlic and sauté for 1 minute. Add the glaze ingredients and bring to boiling. Lower the heat, return the cooked chicken breasts and any accumulated juices to the skillet, and cook on low heat for 4 to 5 minutes, spooning the sauce over the chicken.
