4 cups blackberries or blueberries
1/2 cup water
1 Tbsp. cornstarch (optional)
2 Tbsp. water (optional)
1-2 tsp. sugar substitute or sugar blend (optional)


  1. Wash the berries, discarding any that are shriveled. 
  2. In a large bowl, mash the berries with a potato masher.
  3. Add the fruit and the water to a large saucepan over medium-high heat and bring to boiling.
  4. Lower the heat and simmer for 1 hour, until thick, stirring often so the mixture does not burn. If desired, for a thicker texture, mix 1 tablespoon cornstarch with 2 tablespoons water until smooth. After the berries have simmered for 1 hour, add the cornstarch mixture to the berries and continue to cook until you reach your desired consistency. Let cool to room temperature.
  5. If desired, add sweetener. This pudding is traditionally served as is or you can use it to top yogurt or cottage cheese. If you use blackberries, the pudding will have a coarser texture than that made with blueberries.
