1 Tbsp. vegetable oil
2 large Granny Smith apples, peeled and halved; cut 8 thin slices (set aside) and chop the remainder
2 tsp. ground cinnamon
1 1/4 cups cake flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 cup stevia-sugar blend (such as Domino Light)*
1/2 cup light buttery spread (such as Smart Balance Light)
2 eggs
3/4 cup plain nonfat yogurt or low-fat buttermilk
1 Tbsp. confectioner's sugar (optional)
*Or make your own blend with 1/4 cup granulated stevia (such as Stevia in the Raw) and 1/4 cup granulated sugar. This recipe also tested well with 1/2 cup Splenda Granulated, although we preferred the tender crumb that resulted from using the sugar blend.


  1. Preheat the oven to 350 degrees. Cut a piece of parchment to fit an 8-inch-diameter cake pan. Line the pan with the parchment. Set aside. In a large skillet, heat the oil over medium-high heat. Add the chopped apples and sauté for about 3 minutes. Add the cinnamon and sauté for 2 minutes more. Set aside.
  2. In a medium bowl, mix the cake flour, baking powder, and baking soda.
  3. In a large bowl, beat the stevia-sugar blend and buttery spread. Add the eggs and mix until smooth.
  4. Add the flour mixture and yogurt alternately to the egg mixture, and mix until blended. Fold in the cooked, chopped apples. Mix well.
  5. Add the batter to the prepared cake pan, arrange the apple slices on top, and bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Cool the cake in the pan on a wire rack for 15 minutes.
  6. Invert the cake onto a cooling rack. Let the cake cool for about 15 to 20 minutes more. Carefully peel off the parchment paper, and invert the cake to cool completely right side up. If desired, garnish with a sprinkle of confectioner's sugar.
