3 tsp. canola oil, divided
1 cup (1/4 lb.) low-fat smoked turkey sausage, diced
6 cups water
1 cup chopped onions
1 Tbsp. cider vinegar
2 tsp. sugar
1 bag (16 oz.) fresh turnip greens
3/4 tsp. salt
Louisiana-style hot sauce (optional)


  1. Heat 1 tsp. of canola oil in a Dutch oven over medium-high heat. Tilt the Dutch oven to coat the bottom lightly. Add the sausage, and cook until browned, stirring frequently. Set aside on a separate plate.
  2. Add the water, onions, vinegar, and sugar to the Dutch oven, and bring to a boil over high heat. Gradually add the turnip greens, bring to a boil, and stir until wilted. Reduce the heat, cover, and simmer 30 minutes, or until tender. Drain the greens, reserving 1/2 cup of liquid. Return the drained greens to the Dutch oven along with the reserved liquid, sausage, remaining 2 tsp. of oil, and salt. Let stand 5 minutes to absorb flavors. Serve with optional hot sauce.
