- Combine the amaranth and water in a saucepan, and bring to a boil. Lower the heat, and simmer for 20 minutes.
- Add the cooked amaranth to another saucepan. Add the apple juice, raisins, walnuts, honey, cinnamon stick, and lemon juice, and bring to a boil. Lower the heat, and simmer uncovered for 15 to 18 minutes. Remove the cinnamon stick, and serve in individual dishes.
