1/2 cup finely crumbled reduced-fat Ritz crackers
2/3 cup finely chopped pecans
3 egg whites
1/3 cup sugar
1 1/2 tsp. almond extract (divided use)
1 tsp. vanilla extract
1 (8 oz.) container fat-free frozen whipped topping, thawed


  1. Preheat the oven to 300°F.
  2. In a small bowl, combine the cracker crumbs and pecans. In a medium bowl, beat the egg whites until stiff, then gradually add the sugar, 1/2 tsp. almond extract, and vanilla. Stir in the cracker mixture.
  3. Transfer the mixture to a pie plate coated with nonstick cooking spray. Bake for 45 minutes, or until golden brown. Cool and refrigerate.
  4. Mix together the remaining 1 tsp. almond extract with the whipped topping. Spread on the pie, and return the pie to the refrigerator until serving time.
