Balsamic red onion
1 large red onion, halved, peeled, and sliced into 1/4-inch-thick pieces
2 tsp. olive oil
2 tsp. balsamic vinegar
Kosher salt and fresh-ground black pepper to taste
Green Beans
1 lb. fresh green beans, trimmed
1 1/2 tsp. olive oil


  1. Prepare the red onion: Preheat the oven to 400°F. Toss the red onion pieces with the 2 tsp. olive oil, balsamic vinegar, salt, and pepper. Place the onions in a single layer on a baking sheet lined with parchment paper. Roast for about 25 to 30 minutes, shaking the pan occasionally until the onions are very tender and deep in color.
  2. Meanwhile, bring a pot of lightly salted water to a boil. Add the green beans, turn off the heat, and let them stand in the water for about 2 minutes. Drain and run under cold water; drain again.
  3. Heat the 1a tsp. of olive oil in a large skillet. Add the green beans, and sauté for 3 to 5 minutes. Add the roasted red onions, and cook for 2 to 3 minutes. Taste and correct the seasonings, if needed.
